Apple Doodles


Tuesdays evenings are rough. Big B is at the church most nights until at least 10pm. The kids have a hard time not being entertained as I clean up dinner and do all the dishes. I had been taking the kids to the park Tuesday evenings, but now that it is getting darker earlier I just don't feel that safe going to the park by myself. Especially since the parking lot at the park near out house is not anywhere close to the playground. Plus the lighting is not that great at night. Anyway, the kiddos are NOT happy about the arrangement. So tonight I decided to let them help me make some cookies. They LOVE to bake, and make messes in general. We had a LOT of apples so I looked up a recipe that would need apples....I found this one....for apple doodles...a apple snicker-doodle if you will. They were easy to make and yummy!! It was a fun little fall cookie to celebrate the first day of fall! However, I must admit Mr.C would not even try one because it did not have any chocolate chips!! He is so stubborn sometimes.....he missed out because Sweet E and I thought they were YUMMY!!

Apple Doodles

Ingredients
:

2/3 cup butter-flavored shortening
1 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
2-1/4 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup finely diced peeled tart apple
3/4 cup chopped walnuts, optional (in our case not even optional with Big B's gag reflex to nuts)

Directions:

In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cinnamon, baking powder, baking soda and salt; stir half into the creamed mixture. Stir in the apple, walnut if desired and remaining flour mixture.

Drop by heaping teaspoonfuls 3 in. apart onto lightly greased baking sheets. Bake at 375 degrees for 13-15 minutes or until golden brown. Remove to wire racks to cool. Yeild: 3-1/2 dozen.
